Ingredients:

  • 200 g of zucchini
  • 200 g of carrots
  • 200 g of potatoes
  • 100 g of fresh cream>
  • 50 g of grated Parmesan cheese
  • 2 eggs
  • Salt and pepper to taste
  • Extra virgin olive oil

Method

Cook the vegetables:

Boil the potatoes and steam the carrots and zucchini until tender.

Prepare the mixture:

Mash the potatoes and combine with diced carrots and zucchini, cream, Parmesan, eggs, salt, and pepper. Mix well until you obtain a homogeneous mixture.

Pour into molds:

Grease the molds and fill them with the mixture.

Bake in the oven:
