A visually stunning and delicious main course that wins everyone over: the paccheri stuffed with ricotta and zucchini are soft and creamy, ideal for a special lunch.

Ingredients:

  • 300 g of paccheri
  • 200 g of ricotta
  • 2 zucchinis
  • 50 g of grated Parmesan cheese
  • 200 ml of béchamel sauce
  • Salt to taste
  • Black pepper to taste
  • Fresh basil
  • Extra virgin olive oil

Preparation:

Cook the paccheri:

Boil them in plenty of salted water for half the indicated cooking time, drain and set aside.


Prepare the filling:

Grate the zucchinis and mix them with the ricotta, Parmesan, salt, and pepper.


Fill the paccheri:

Using a teaspoon, stuff the paccheri with the ricotta and zucchini mixture.

Arrange them in a baking dish:

Pour some béchamel sauce on the bottom of a baking dish, arrange the stuffed paccheri, and cover them with more béchamel sauce.

Bake in the oven:

Bake at 180°C for about 20-25 minutes until golden on top.
