Our dairy is equipped with the most advanced technologies and tools for food compliance and safety analysis. Every year, in our laboratory, we carry out over 100,000 tests on the organoleptic (sensory) properties of our products. Our facilities and production methods help us ensure that our products meet the strictest hygiene and food-safety standards. In addition, the quality of our raw materials, the experience gained over time by our master cheesemakers, and our daily checks allow us to maintain consistently high production standards throughout the year—an achievement we are particularly proud of.
The same process we use to produce Nobili cheeses is based on just a few steps, leaving the rest of the work to the hands of our master cheesemakers, who cut, stretch and braid Mozzarella, Trecce and Nobili Bocconcini by hand.

Our connection to this land is a special bond, deeply rooted in our own history. Every day, at Nobili Dairy, we receive milk from more than 80 farms in Padua and the surrounding provinces.

Nobili Dairy was founded in Padua in 1966, when our grandfather Mario—a shepherd from Tuscany—decided to move to Veneto, leaving his homeland to take over a dairy in the province of Padua and begin producing our delicious Nobili Mozzarella.
